Ingredients: 1.25 cups shredded mozzarella 3 wedges (63 grams) of laughing cow cheese(plain or whitecheddar) OR 2 ounces creamcheese 1 cup blanched superfine almond flour 1 tablespoon coconut flour 1 largeegg beaten , plus more for egg wash 1 tablespoon baking powder Everything bagel seasoning sesame seedsorpoppyseeds Prep Time 10 minutes Cook Time 15 minutes Total Time 25 minutes Servings 6 bagels Calories198 kcal Instructions: Start off by preheating the oven to 400 F. Line abaking sheet with parchment paper andsetaside. Line your work-surface with a silicone mator parchment paper to prevent sticking. Melt the cheeseseither over a double boiler orin the microwave in 30 second increments(stirring very well in between). In largemixing bowl, whisk together the almondflour, coconut flour and baking powder. Add thebeaten egg followed bythe HOT cheesemixture. If thedough is too sticky, you can wrap it with plasticwrap and chillit in the fridge for 20 minutes.) Mold the dough into a smooth and uniformdough ball then divide equally into 6balls. Take each ball and roll into a log, then pinch andconnect the ends for form a bagel shap. Placeon theprepared baking sheet. Repeat withremaining dough. Lightly brush each bagel with egg wash andsprinkle onyour favorite seasoning. Bake in preheated oven for 12-15 minutes, oruntil golden.
