Carrot cake with Cream Cheese Frosting

​1 cup all purpose flour

1 cup whole wheat flour

2 tsp baking soda

1 tsp baking powder

2 tsp cinnamon

1 tsp salt

1/2 tsp nutmeg 

Pinch ground cloves

1/2 tsp ground ginger

4 large eggs

1 cup granulated sugar 

3/4 cup packed dark brown sugar 

1 tsp vanilla extract 

1 cup canola oil

3 cups shredded carrots

3/4 chopped walnuts 


Cream cheese frosting

8 oz cream cheese

1/4 cup unsalted butter 

1 tsp vanilla extract 

1/2 tsp grated orange zest

3 cups confectioners sugar

Grated coconut garnish


Directions

Mix dry ingredients. Beat eggs, sugar and vanilla until smooth. While mixing, slowly add oil. Add mixed dry ingredients. Mix in carrots and walnuts. 

Spoon into 2 greased and floured 9” pans. Bake at 350 for 40 minutes. Cool for 10 minutes before inverting onto plates. Frost and garnish.
