Chicken Rice (Mummy's recipe)

Start by brining the chicken. You can use legs or breast but don't cut the flesh.
1 gallon cold water
1/2 cup kosher salt
1/2 cup sugar
Mix everything together with a whisk. 

Place the whole chicken or parts in brine for 2 hours up to overnight. Cover and store in refrigerator. 
Remove chicken from brine and rinse well. Pat dry. 
Rub sesame oil on chicken and steam. 
For the rice, follow the same method.

Yee Sang

Shred:
1/4 pomelo
1/2 cabbage
2 carrots
1 cucumber
1 Asian pear
1/2 sweet potato
Sashimi fish
1 beetroot shredded and deep fried until crispy
1/2 sweet potato shredded and deep fried until crispy
Deep fry 5 sheets Wonton skin cut into strips
2 tbs julienned pickled ginger 
Assemble on round plate
Sprinkle with 
1/4 tsp white pepper
1 tbs cinnamon 
1 tbs 5 spice
Sauce
1/4 cup dark Plum sauce
1 tbs sesame oil
Water to get right consistency





Green Chile Cilantro Sauce

1 bunch cilantro
12 or more green chilis/jalapenos
1 big cluster garlic or more
6-8 fresh limes
fish sauce
brown sugar or regular sugar or 1/2 and 1/2

squeeze limes to make lime juice. throw cilantro (including stems), jalapenos, garlic into blender with a little fish sauce, lime juice and sugar. once the consistency is smooth, add more lime juice, fish sauce, sugar to your own taste and consistency.

Ingredients:
500g spaghetti- rebus, Toscana & simpul  menjadi anggaran an 20 sanggul

1kg ikan parang
3 sudu besar udang hidup (kecil)
2 sudu besar udang kering
1 sudu besar lada boh (I just use 2or 3 dried cili, whole
500g santan
5 sudu besar rempah kari ikan

15 ulas bawang merah (shallots)
4 ulas bawang putih
3 batang serai
5cm lengkuas
3 cm halia
1/2 tsp belacan

All this to be blended fine

2 ulas bawang putih

All sliced fine

2 sudu besar kerisik
1 sudu kecil gula melaka
3 keping asam keping
3/4 cawan minyak
7 cawan air (anggaran)
Garam

Bahan iringan
1 cawan sambal belacan
1/2 cawan lobak asin cencang

2 labu bawang besar
40 helai daun kesum
40 helai daun selasih

All sliced thinly

2 biji timun- hiris nipis mengikut kulit
500g tauge- buang ekor


Bersihkan ikan, udang basah dan udang kering. Rebus bersama 5 cawan air, toskan. Keluarkan tulang ikan dan kulit udang. Kisar semua isi hingga halus.
Pijar minyak di dalam periuk, tumis bawang yang dimayang hingga kekuningan. Masukkan ramuan yang dikisar, masak hingga terbit minyak.
Masukkan campuran ikan dan udang serta air rebusan, masak di-atas api kecil hingga mendideh.
Sementara itu, sediakan periuk lain dan masak santan hingga sekali mendideh. Masukkan kuah campuran ikan dengan udang tadi, kacau rata. Taruk asam keping, cili kering dan kerisik. Kecilkan api dan masak hingga santan pecah minyak, agak 30 minute. Taruk daun kesum.
Sekiranya terlalu pekat, tambah air. Taruk garam, gula mengikut rasa.

Fried Bananas

2 packs rice flour
1 1/2 bags tempura flour
1/4 pack steam bun flour
1 pack grated coconut
1 box dark brown sugar (or mix light and dark)
Pinch kapur 
Pinch of salt
Add water slowly until pancake batter consistency 

Mummy's clam and spaghetti recipe

Chop garlic, cut tomatoes into wedges, spread everything on a baking sheet or tray. Sprinkle liberally with salt and pepper and olive oil. Bale in 350 oven. Make sure clams are in single layer as they open at different times. Nothing worse than overcooked clams. Toss the whole thing with the pasta including juices.

2cups self raising flour 
2/3 cup corn flour 
1/2 tsp turmeric 
3 pinches salt 
Ice cubes and water mix to pancake batter consistency 
Light flour fish filet
Dip in batter
Deep fry
Use extra batter for cucur udang
