Chicken Rice (Mummy's recipe)

Start by brining the chicken. You can use legs or breast but don't cut the flesh.
1 gallon cold water
1/2 cup kosher salt
1/2 cup sugar
Mix everything together with a whisk. 

Place the whole chicken or parts in brine for 2 hours up to overnight. Cover and store in refrigerator. 
Remove chicken from brine and rinse well. Pat dry. 
Rub sesame oil on chicken and steam. 
For the rice, follow the same method.
